Creamy Chicken and Potatoes

 After making this one there are a few small changes I would make. It was good, but could be great! (That's what happens when you make up your own recipes, haha; you never know how they will turn out!)


Ingredients:

Chicken Breasts

Shake N Bake (or smashed Ritz crackers work well.)

Egg, for the shake n bake.

Potatoes, diced

Broccoli

Shredded Mozzarella

Butter

Cream Cheese, softened

Ricotta Cheese, softened

1 Packet of Garlic Parmesan Seasoning 

My edit would be adding some Heavy Cream

Minced Dried Onions


Directions: 

Coat Chicken with Shake n Bake , and pan fry for a few minutes on each side.

Layer bottom of 9 x 13 pan with diced potatoes and broccoli. Throw a few pats of butter in there. 

In a separate bowl, mix together ricotta, cream cheese and the seasoning packet.  This is where I would stir in some heavy cream, to make it closer to a liquid than a solid, lol. 

Sprinkle some mozzarella over the potatoes, then lay chicken breasts on top.

Spread/pour cheese mixture over chicken, with the rest over the potatoes. 

I sprinkled the extra shake n bake on top for a little crunch. 

Bake for 45- 60 minutes at 350*.  (Covered for the first 30 minutes.)

Chicken Broccoli Alfredo "Soup"

 

Ingredients:

Pasta

Garlic Parmesan Seasoning Packets

Canned Chicken 

Broccoli Florets

Heavy Cream

Cream Cheese

Dried Minced Onion

Cauliflower Rice (if you want it thicker like a stew.) 


Directions:

Boil Pasta and set aside.

Precook broccoli and set aside.

Cook chicken on the stovetop with 1/2 a seasoning packet and dried onions.

When cooked through, add cream cheese.

When cream cheese is melted, add broccoli and rest of seasoning packet. 

Add cream and simmer. 

Put everything in pasta pot, with as much chicken stock or water as you want for your consistency. Add in cauli rice and 2nd seasoning packet, as well. 

Simmer until you can't wait any longer too eat!

Easy Peasy Sausage and Rice

This was one of those "I have no idea what I'm making for dinner but I have sausage thawed" kind of meals.  


 Ingredients:

Sausage (I used venison.) 

Minute Rice

Butter

Fresh Garlic

Onions

Salt


Directions:

Cook rice separately.

Pan fry sausage and onions in butter.

Add everything together in  frying pan with a bit more butter and increase heat to begin caramelizing.  


Sounds so simple, but was amazingly delicious!
