Bacon "Bourbon" Meatloaf

Disclaimer: I used half ground bear meat and half lean ground beef. It would likely taste exactly the same if you use all ground beef.

 

Ingredients:

Ground Beef

Ground Bear

Onion Soup Mix

Oats

Ketchup

Hoisin Sauce

Bacon (Precooked and chopped)

Egg

 

Directions:

Mix everything together.

I make mine in muffin tins for a perfect portion size.

Mix together ketchup and hoisin sauce (more than what you put in the meat mixture) and spread generously on top of each loaf-let. Sprinkle bacon on top. Bake at 350* for about 45 minutes.

Baked Salsa Chicken

Ingredients:

Chicken breast, butterflied

Salsa

Egg

Shake'N'Bake

Cheese

 

Directions:

Roll chicken in egg, then coat with Shake'N'Bake.

Cover with salsa.

Load on the cheese.

Bake at 350*  for about 30 minutes.

Cheat Meal: Ham and Broccoli Mac

Ingredients: 

Mac and Cheese (I used a Knorr side pasta.)

Diced Ham

Frozen Broccoli

Shredded Cheese


Directions:

Make Mac n Cheese.

Add ham and heated broccoli.

Top with Shredded Cheese

Cheat Meal : Chicken Broccoli Alfredo

Ingredients:

Pasta (I used rotini) 

Canned Chicken or diced chicken breast

Jarred Alfredo Sauce (I used Ragu)

Frozen Broccoli

Heavy Cream or Milk

Dried Minced Onions


Directions: 

Boil pasta

Cook chicken through with minced onions.

Add alfredo sauce, heated broccoli, and cream or milk thinned to preference. 

Serve over pasta, with garlic bread.

Sloppy Jo Tator Tot Casserole

Ingredients:

Lean Ground Beef

Manwich (or make your own sloppy jo sauce...I'm entirely too lazy.)

Minced Dried Onion

Cheese

Tator Tots (I like the Crispy Crowns best.) 


Directions:

Cook ground beef and add sloppy jo sauce. 

Add some minced onions. (I add a ton.)

Pour into casserole dish. Add a layer of cheese. (I use shredded colby jack.)

Layer tator tots on top.

Bake per the tator tot directions. (I broiled it for a few minutes to really crisp up the tots!)



I was too tired to take step by step photos. Sorry. Pretty simple though.

Bacon Wrapped BBQ Chicken

 

Ingredients: 

Chicken Breast

Pre-cooked Bacon (raw bacon takes too long to cook, and will dry out the chicken!)

BBQ Sauce 

(Toothpicks)


Directions:

Cut chicken into strips

Coat with BBQ Sauce

Wrap with bacon and secure with toothpicks. 

Bake at 375* for about 20 min. 

Yup. That easy!

Slow Cooker Pork Chops

Ingredients:

Pork Chops (I prefer thin cut)

Cream of Mushroom

Gravy

Onion Soup Mix

Small Red Potatoes

Green Beans (Optional)


Directions:

Throw everything but green beans (unless you are using raw beans) into slow cooker.

Cook on low all day.  Gently stir a few times.

Add canned beans in last 30 minutes if desired.

Venison Sausage, Potatoes and Onions

 Ingredients:

Vegetable Oil

Venison Sausage

Potatoes

Onion Soup Mix

Butter 


Directions: 

Dice onions, potatoes and sausage. 

Add to 9 x 13 dish, along with some oil and onion soup mix.

Bake at 450, covered for 30 - 40 minutes, or until potatoes are tender. 

Uncover, bake an additional 5 minutes with a few pats of butter thrown in.

Cream Cheese Chicken


Ingredients: 

Chicken Breasts

Cream Cheese

Garlic Parmesan Seasoning

Shake N Bake

Egg


Directions: 

Cut chicken breasts in half, then butterfly and flatten a bit. 

Mix softened cream cheese with seasoning packet. 

Put a blob of the seasoned cream cheese inside the chicken breast and fold shut. 

Dip stuffed chicken into egg, then coat with Shake N Bake. 

Bake at 350* for about 45 minutes.
