Slow Cooker: Southwest Chicken Chili

This recipe is a bit versatile in how you can serve it. We usually serve it over rice or make tacos with it. It can be eaten by itself as well!
Ingredients:
Chicken Breasts
Cream of Chicken Soup
Taco Seasoning
Black Beans
Corn
Diced Tomatoes
Salsa
Riced Cauliflower
Directions:
Place cream of chicken soup, chicken breasts, about  1/2 - 1 cup of salsa, and one packet of taco seasoning into slow cooker on low.
Shred chicken once cooked through.
Add beans, corn, diced tomato.
Add riced cauliflower a few minutes before serving.
This time we ate it as tacos with:
10" tortillas
Light Sour Cream
Fresh Cilantro
Lettuce
Shredded Cheese









June Stuff

This is a family recipe; one of my favorites growing up! (I send a lot of meals by my Grandparents, and I sent a dish of this and my Grandma was SO happy to be eating this again! Adorable.)
Ingredients:
Ground Beef
Onion
Celery
Shredded Carrots
Chicken Noodle Soup
Cream of Mushroom Soup
1 Cup Uncooked Rice
Soy Sauce ( 3 generous splashes, lol)
1 Cup Milk
2 Cups Water
Directions:
Sauté onions, celery and carrots.
Add ground beef and cook through.
In a casserole dish mix  together both soups, milk, water, rice and soy sauce.
Mix in veggies and meat.
Cook about 30-45 minutes at 350*.

Slow Cooker: Chicken Alfredo with Broccoli

Ingredients:
Cream of Chicken Soup
Chicken (I used breasts, but really you could use anything boneless.)
Alfredo Sauce (I do have a recipe for good alfredo sauce, but this was totally just jarred stuff!)
Broccoli
Pasta

Directions:
Mix 1 can of cream of chicken soup with about 2/3 can of water, and put in slow cooker on low.
Add chicken.
Flip chicken every hour or so (if you can, but if not, it'll be fine.)
I cooked it for about 6 hours, then shredded the chicken.
Add jar of alfredo sauce and broccoli and heat through.
  * Note: I used frozen steamable broccoli and just added it at the end. If you want fresh broccoli, add with about 2 hours left.
Serve over pasta; I used angel-hair.

Cheat Meal: Ham and Broccoli Mac

Sometimes when anyone else in the world would throw a frozen pizza in the over or order takeout (after a long shift at work, perhaps,) I make what I call Cheat Meals. I use prepackaged food and just add a few things to make it more of a tasty home-cooked meal! 


Ingredients:
Boxed Mac N Cheese (I used Craft 4 cheese deluxe)
Diced Ham
(Frozen) Broccoli
Shredded Cheese
Minced Dried Onion
 
Directions:
Cook Mac n Cheese according to directions.
Add in minced onion, cubed ham, shredded cheese and cooked broccoli.

Pizza Soup



Ingredients:
Pizza Sauce
Pasta (I used rotini)
Onion
Sweet Bell Peppers
Beef Broth
Mini Pepperoni
Heavy Cream
Shredded Mozzarella
Black Olives
(You can add any veggies or pizza toppings you want, really.)

Directions:
Sauté onions and pepper in some butter or oil.
Add beef broth. (I didn't have any so I used bouillon cubes.)
Simmer for a bit then add the pizza sauce.
Add cooked noodles and pepperonis.
Serve with shredded mozzarella (and we also added some parmesan!)
(Not everyone likes black olives in our house, so I just added them at the end.

Comfort Food: Zucchini Casserole

This dish is just cheesy, gooey and delicious! Definitely a great comfort food!



Ingredients:
Zucchini
Onion
Shredded Carrots
Diced Ham
Shredded Cheese
Cream of Chicken Soup
Sour cream - about a cup
Croutons
Splash of Heavy Cream
 
Directions:
Slice zucchini (I peeled mine, you can or not....) and boil for 5-10 minutes to soften.
Sauté carrots and onions.
Mix in a bowl cream of chicken, sour cream, croutons, ham, cheese.
Mix in zucchini and carrots/onions.
Combine well and add a splash of cream.
Cover with cheese, then bake for 30 minutes at 350*.

Go To: Garlic Chicken and Butter Noodles

I have a few meals that are my "I have no idea what to make for dinner" meals. They are quick and easy and I tend to have all ingredients on hand. This one is definitely a family favorite!


Ingredients:
Onion
Garlic
Salt, Seasoning Salt, Parsley
Chicken
Butter
Egg Noodles (or any pasta really...)

Directions:
Sauté diced onion in olive oil
Add chopped chicken, and season.
Cook through, then add garlic. 
Add a blob of butter and increase heat to caramelize chicken/onions.
Serve over buttered noodles. We usually also have parmesan on top!

Stewed Steaks

Warning: This meal is not for folks who like their steaks rare. They DO get cooked through!
 
 
 
Ingredients:
Gravy
Hoisin Sauce
Onion Soup Mix
Steaks
Potatoes
Carrots
Celery
Onion
(Any veggies you want, really.)
 
Directions:
Cut potatoes, onions and celery in large chunks.
Throw everything in slow cooker.
I cooked it on high for 5 hours.

Chicken Pot Pie ...(and a tiny bonus)


Ingredients:
~Chicken (I forgot to defrost chicken breasts, which is what I usually use. I used canned chicken and will likely use that from now on for this meal!)
~Pie Crusts
~Cream of Chicken
~Veggies
~Ranch Packet
~Milk
~Cheese


Directions:
Grease pie pan and lay bottom crust. Don't forget to poke a few vent holes!
In one pot, combine cream of chicken, some milk (1/2 cup maybe?), veggies and half of ranch packet.
In a pan, sauté chicken with other half of ranch packet (and I threw in some garlic.)
Mix both together, add in handful of cheese, and fill pie crust.
Top with other pie crust. Pinch together. I am a bit anal and need to make the
Bake at 350* until golden brown (about 30 min?).













Chicken Salad Wrap!
 
I had some extra chicken mix left from the pot pie. So, I added some light mayo and a bit of shredded cheese and made a wrap with lettuce for lunch the next day!
