Creamy Chicken and Potatoes

 After making this one there are a few small changes I would make. It was good, but could be great! (That's what happens when you make up your own recipes, haha; you never know how they will turn out!)


Ingredients:

Chicken Breasts

Shake N Bake (or smashed Ritz crackers work well.)

Egg, for the shake n bake.

Potatoes, diced

Broccoli

Shredded Mozzarella

Butter

Cream Cheese, softened

Ricotta Cheese, softened

1 Packet of Garlic Parmesan Seasoning 

My edit would be adding some Heavy Cream

Minced Dried Onions


Directions: 

Coat Chicken with Shake n Bake , and pan fry for a few minutes on each side.

Layer bottom of 9 x 13 pan with diced potatoes and broccoli. Throw a few pats of butter in there. 

In a separate bowl, mix together ricotta, cream cheese and the seasoning packet.  This is where I would stir in some heavy cream, to make it closer to a liquid than a solid, lol. 

Sprinkle some mozzarella over the potatoes, then lay chicken breasts on top.

Spread/pour cheese mixture over chicken, with the rest over the potatoes. 

I sprinkled the extra shake n bake on top for a little crunch. 

Bake for 45- 60 minutes at 350*.  (Covered for the first 30 minutes.)

Chicken Broccoli Alfredo "Soup"

 

Ingredients:

Pasta

Garlic Parmesan Seasoning Packets

Canned Chicken 

Broccoli Florets

Heavy Cream

Cream Cheese

Dried Minced Onion

Cauliflower Rice (if you want it thicker like a stew.) 


Directions:

Boil Pasta and set aside.

Precook broccoli and set aside.

Cook chicken on the stovetop with 1/2 a seasoning packet and dried onions.

When cooked through, add cream cheese.

When cream cheese is melted, add broccoli and rest of seasoning packet. 

Add cream and simmer. 

Put everything in pasta pot, with as much chicken stock or water as you want for your consistency. Add in cauli rice and 2nd seasoning packet, as well. 

Simmer until you can't wait any longer too eat!

Easy Peasy Sausage and Rice

This was one of those "I have no idea what I'm making for dinner but I have sausage thawed" kind of meals.  


 Ingredients:

Sausage (I used venison.) 

Minute Rice

Butter

Fresh Garlic

Onions

Salt


Directions:

Cook rice separately.

Pan fry sausage and onions in butter.

Add everything together in  frying pan with a bit more butter and increase heat to begin caramelizing.  


Sounds so simple, but was amazingly delicious!

Skillet Cheesy Potatoes and Venison Sausage

 Ingredients: 

Frozen Southern Hash browns 

Sausage (I used venison.) 

Dried Minced Onion (Fresh onion would be amazing, but I dropped the ball, lol.)

Cheddar Soup

Heavy Cream

Shredded Cheese


Directions: 

Pan fry hash browns (and onions if you use fresh.)

Add sausage, cook through. 

Add cheddar soup, heavy cream and shredded cheese.

Sesame Mini Meatloafs

 Ingredients:

Lean Ground Beef 

Oats

Sesame Sauce

Minced Dried Onion

Egg

Onion Soup Mix

Crushed Ritz if it is too moist. 


Directions. 

Mix everything together.

Dollop some sesame sauce on the top of the balls-o-meatloaf

Bake in muffin tin at 350 until done. Usually 30 - 45 minutes, depending on the size of your 'meat muffins.'







Baked Sweet Ham and Cheese Sandwiches

 Ingredients:

Crescent Dough Sheets

Deli Ham (I used honey ham.)

Sliced Provolone

Shredded Mozzarella

Honey

Butter


Directions:

Spray 9 x 13 pan with Pam.

Press out 1 sheet of crescent dough into bottom.

Layers some ham and provolone...as much as you'd like. 

Add a bit of shredded mozzarella on top. Drizzle with honey.

Spread 2nd crescent dough sheet on top. 

Melt some butter and honey and mix together, and spread on top of dough. 

Bake at 350, covered for 15 minutes, then uncovered until golden brown.

Sloppy Joe Crescents

Ingredients:

Ground Beef

Manwich Sauce (or make your own if you aren't a lazy beast..... *shrug* )

Crescent Rolls

Cheese


Directions:

Make sloppy joe as usual.

Lay out crescent dough and put a blob of sloppy joe and some cheese on it. 

Roll up and bake! 





Chicken Noodle "Casserole"

Ingredients:

Egg Noodles

Chicken

Cream of Chicken

Cream Cheese

Vegetables

Cheese

Ranch Seasoning


Directions:

Cube and cook chicken, with ranch seasoning.

In separate pan, mix everything else (but noodles.)

Serve all together.

Lasagna Casserole

 

Ingredients:

Pasta

Lean Ground Beef

Onion

Spaghetti Sauce

Tomato Sauce

Diced Tomatoes

Worcestershire Sauce

Oregano

Parsley

Basil

Garlic

Mozzarella Cheese

Ricotta Cheese

Cottage Cheese

 

Directions:

Boil and drain pasta.

Cook ground beef and onions.

Add to beef pan, garlic, spaghetti sauce, tomato sauce, diced tomatoes, oregano, basil, parsley and Worcestershire sauce.  Simmer until you don't feel like waiting any more.

Add all ingredients to casserole dish and top with cheese.

Bake at 350* until cheese is golden, approx. 30 min.

Twice Baked Potato Casserole

 

Ingredients:

Potatoes

Canned Chicken

Mayo

Sour Cream

Butter

Milk

Onion Powder

Minced Dried Onions

Parsley

Cheese

Riced Cauliflower (optional)


Directions:

Peel, chop and boil potatoes.

Whip into mashed potatoes with butter, mayo, sour cream, milk and onion powder. (and riced cauliflower if you use that to cut down on calories.)

In separate pan, cook chicken with minced onions and parsley. 

Add chicken mixture and cheese into mashed potatoes. 

Put in casserole dish and cover with cheese. 

Bake at 350* until cheese is golden brown. (about 30 min.)

Cheesy Chicken Rollups

 

 

Ingredients:

Crescent Dough

Cheese

Chicken (canned worked perfectly here.)

Dried Minced Onion (my cooking bff)

Ranch Seasoning

(Had green onions to use, and forgot.)

(Planned to add bacon, but ran out.)

 

Directions:

Cook chicken with minced onion and ranch seasoning.

Roll crescent dough out, fill with chicken and cheese (and bacon and green onions if you didn't semi-fail at meal planning, ha!)

Bake until golden brown!

Chicken Bacon Ranch Sammiches



 

 

Ingredients:

Chicken Breasts

Ranch Seasoning Packet

Cream of Something Soup (I used mushroom, but that doesn't affect taste much in this recipe.)

Cream Cheese

Bacon

Minced Onions

 

Directions:

Cook chicken, cream soup, minced onion and ranch in slow cooker. Low for 6 hours-ish.

 Shred chicken.

Add cream cheese and heat for 30 more minutes.

Cook bacon until crispy then crumble into chicken.

I served it on toasted Sweet Onion Rolls.

Sweet N Sour Kielbasa

Ingredients:

Kielbasa

Sweet n Sour Sauce

Rice

Cauliflower Rice

Sweet Peppers

Onion

 

Directions:

Sauté peppers and onions.

Add sliced kielbasa.

Add rice and sauce and saute for another few minutes.

 

 

 

 

 
 
 

 

Cheesy Crockpot Potatoes

 

Ingredients:

Frozen Diced Potatoes

Can Cream of Chicken Soup

Sour Cream

Shredded Cheese

Diced Ham

Minced Onion

Onion Powder

Garlic Powder

 

Directions:

Throw all in crock and cook on low for 4 hours.
