Chicken Fried Rice

Ingredients:
Chicken
Carrots
Onion
Teriyaki Sauce
Soy Sauce
Peas
Rice
Cauliflower Rice
 
Directions:
Sauté onions and carrots in olive oil.
Add cubed chicken.
Make rice, adding a splash of both sauces.
When chicken is thoroughly cooked, add sauces to pan.
Add rices and frozen peas to pan.  (I use half regular rice, half cauli rice. Doesn't change flavor at all, but reduces calories.)
Increase heat to  high to "caramelize" mixture, stirring every 30 seconds for about 2 minutes.
Serve and Enjoy.

Baked Penne Marinara

I started making spaghetti and then realized I didn't have several of the ingredients I needed. This was the result of wingin' it!
 

Ingredients:
Pasta (I used penne, but you could use lots of other types!)
Lean Ground Beef
Onion
Spaghetti Sauce
Cream of Chicken
Garlic
Shredded Mozzarella
Basil
Parsley
Oregano
Worcestershire sauce
 
Directions:
Boil pasta.
Dice and being to sauté onion.
Add ground beef, cook through (and crumble finely.)
Add spaghetti sauce, garlic, cream of chicken, spices and Worcestershire sauce.
Simmer.
Mix in bowl with boiled pasta, handful of shredded mozzarella, and meat sauce.
Put in dish and cover with shredded mozzarella.
Bake until cheese is golden. (350* for about 30 minutes)
Served with store bought garlic bread.

Ham and Potato Chowder



 Preface: I made sweet ham in the slow cooker the night prior, and planned to use the leftover ham for this soup!
 
  
 
Ingredients:
Potatoes , peeled and diced. 
Ham ( I used leftovers, but I have used packaged dice ham in the past.)
Broth (used beef this time because I had it. Have used chicken in the past.)
Onion, diced
Carrots
Condensed Cheddar Soup
Ranch Seasoning Packet
Heavy Cream
Shredded Cheese
(Wanted to add corn, but spaced and forgot it, lol.)

 
 
Directions:
Sauté onions and carrots in olive oil for a few minutes.
Add potatoes, broth and half of the ranch packet.
Boil until potatoes are mostly tender.
Add ham, remaining ranch seasoning and cheddar soup, simmer.
Stir in shredded cheese and heavy cream.
Simmer until ready to eat!

Chicken Stuffing Casserole



Ingredients:
Chicken (cubed)
1 Package Stuffing Mix
Onion (I was lazy and used dried minced onion this time, lol.)
Butter or Margarine
Shredded Cheese
Water



Directions:
~Pan fry chicken in olive oil. Season however you want. (This time I used garlic, parsley and minced onions.)
~In separate bowl, mix melted butter (3/4 cup...though I never measure, just scoop!), package of stuffing mix, 1 1/3 cups of water, and some shredded cheese. (I used about a handful of shredded cheddar jack.)
~Combine chicken and put in casserole dish.
~Cover with cheese and bake until cheese is golden.
(Sometimes I get impatient. Since the chicken is already cooked, sometimes I bake for 15-20 minutes and then just broil the cheese.)

Note: I usually make a double batch, as this is a family favorite. This batch makes about 4 servings.

Simple Smothered Chicken

 
 
Chicken Ingredients:
Olive Oil
Onion
Butter
Chicken Breasts (Butterflied)
Chicken Gravy (Any gravy works, really)
Onion Soup Mix
 
 
I used packaged mashed potatoes as a side.
 
 
Directions:
Sauté sliced onions in olive oil
Add some butter to the onion pan, along with chicken. Sauté until chicken is almost cooked through.
Add onion soup mix.
Add gravy and sauté on low for a few minutes .
Serve with gravy onion mix on top of chicken (and mashed potatoes in this case.)

Simple Slow-Cooker Meatballs and Potatoes

 
Meatballs Ingredients:
Frozen Meatballs
Sliced Onion
1 Jar Beef Gravy
Beef Stock (as needed)
Onion Soup Mix
 
Meatballs Directions:
Throw everything in the crock, and cook until you're hungry!
 
 
Potatoes Ingredients:
Potatoes (duh, lol)
Onion Soup Mix
Dried Minced Onions
Vegetable oil
 
Potatoes Directions:
Wash potatoes well! (I keep the skins on)
Dice to desired size. (Smaller pieces cook a lot faster!)
Throw ingredients into 9 x 13 pan and bake until tender. (Mix them up once or twice. Usually about 30 minutes for small pieces of potatoes.)

Creamy Slow-Cooker Chicken w Green Beans


This meal is great for  throwing in the crock in the morning, heading to work and having almost a whole meal ready for you when you get home! I served the chicken over egg noodles, but have also served it over rice or on hamburger buns! The beans are just jazzed up canned beans!


Chicken Ingredients:~Chicken Breasts (I used two to feed a family of four.)
~Jar of chicken gravy
~Cream of chicken soup
~Packet of onion soup mix


Chicken Directions:
Throw all ingredients in the crock and cook on low 8 hours. If you are home, you can shred the chicken a bit and stir it every couple hours.


Green Beans Ingredients:
~1 can French cut green beans
~Minced dried onion (1/2 Tbsp maybe? (Unsure, I don't measure...)
~Butter (I use Country Crock, 1 Tbsp maybe?)

~Garlic Salt

Heat through, stir well, and serve!




 





Well, Here We Go!

After some friendly bullying, I caved and decided to take the time to put recipes to my meals and share with friends. My mom was an amazing cook and I seem to have gotten her knack for it. The main issue is that I don't cook with recipes...I just cook. So it will be a bit of an adjustment to try and "make"" recipes,  but I'm up for the challenge!
 
I'm a 36 year old working  full-time in the medical field. I have a husband and two girls, who seem to quite thoroughly enjoy my cooking!
