Simple Smothered Meatballs


Ingredients:
Onion
Gravy (I didn't have beef gravy so I just used chicken. Worked fine!)
Meatballs
Onion Soup Mix

Directions:
Sauté onions.
Add gravy and soup mix.
Add meatballs and simmers until all is heated through.

Served with corn on the cob and mashed potatoes.

Garden Pizza Ravioli




Ingredients:
Peppers
Onion
Diced Tomatoes
Pizza Sauce and/or Spaghetti Sauce
Frozen Ravioli (I used half cheese, half beef)
Garlic, Basil, Parsley
Extras:
Black Olives
Mozzarella

Directions:
Boil ravioli as directed.
Sauté onions and peppers.
Add diced tomatoes, pizza or spaghetti sauce, garlic, basil, parsley.
Combine ravioli with sauce mix. Top with cheese and olives (or whatever else you want!)

Chicken Bacon Ranch Waffle Fries

This is one of my favorite meals I have ever come up with. It was DELICIOUS! Even up until the moment I started cooking, I had no idea HOW I wanted to make it, I just knew WHAT I wanted to make.
Ingredients:
Chicken Breast (Canned chicken would work well here, too.)
Ranch Seasoning Packet
Chicken Gravy
Heavy Cream
Riced Cauliflower
Bacon
Waffle Fries
Cheese (I used sliced Provolone and Shredded Mozzarella)
Directions:
Cube chicken and sauté , with a bit of the ranch sprinkled on top.
When cooked through, add gravy and rest of ranch packet. Simmer.
Add cream and riced cauli. (I added maybe a cup.)
Cook and finely chop bacon, then add to mixture.
Spread mixture into pan.
Top with cheese, then waffle fries.
Bake at 350* for 30 minutes,  then broil until waffle fries are crispy.

Chicken and Pasta with Lemon Butter Sauce



Ingredients:
Lemon Juice
Butter
(Flour, optional)
Chicken
Shake'n'Bake
Egg
Chicken Bouillon

Directions for chicken:
Butterfly or thinly slice chicken.
Dip into egg mixed with lemon juice.
Coat with shake'n'bake.
Pan fry until cooked through.
Squirt some lemon juice onto cooked chicken and cook one more minute-ish.

Directions for sauce:
Heat chicken broth .
Add/melt butter.
Add lemon juice.
If you want a thicker sauce, mix a bit of flour with a bit of water and slowly stir into broth.
Serve lemon sauce with pasta, veggies, chicken, etc.

Shredded Chicken in Alfredo

Home from a 4 day, highly active camping trip....rocking a migraine; did NOT want to make dinner.
Was going to throw some chicken in store bought Alfredo and top some spaghetti. Plans changed when I realized I was out of "back up" Alfredo.
Had to make homemade sauce...but my heavy cream was frozen in the back of the fridge.  Grr, lol. So we had runny sauce. I used milk, but in theory this should be made with heavy cream.
Ingredients:
Pasta (I used angel hair.)
Butter
Heavy Cream
Garlic Powder
Parsley
Minced Onion
Parmesan
Canned Chicken (just easier for shredding. You can use any chicken. Just cook and shred.)
Bacon
Broccoli
Directions:
Sauté chicken with some minced onion, garlic and parsley. Shred while you cook.
Cook bacon until crispy and chop finely.
Boil Pasta.
Melt butter and add cream. Simmer, do not boil!
Add spices and parmesan.
Add shredded chicken and bacon to sauce mix.
Serve over pasta with broccoli!

Stuffed Manicotti



Ingredients:
Manicotti Noodles
Ground Beef
Onion, diced
Spaghetti Sauce (I use Ragu, use whatever or make your own!)
Shredded Mozzarella
Cottage Cheese
Diced Tomatoes
Parsley, Basil, Oregano
Garlic
Worcestershire Sauce

Directions:
Boil water for pasta.
Sauté diced onions.
Add ground beef and garlic. Cook through.
Add spaghetti sauce, diced tomatoes, spices, and Worcestershire sauce.
Separate 1/3 of the meat sauce.
Mix remaining meat sauce with shredded mozzarella and cottage cheese.
Spread a bit of sauce on the bottom of a dish.
Stuff each noodle with meat sauce and lay in dish.
Cover with remaining sauce mix.
Top with shredded mozzarella.
Bake 350* for about 45 minutes.
