Chicken Cordon Bleu Soup



Ingredients:
Chicken (I used canned chicken this time because I was too lazy to cut up breasts, ha!)
Chicken Broth
Alfredo Sauce Mix
Diced Ham
Potatoes
Onion
Cream Cheese
Heavy Cream
Celery
Green Beans (I used canned, French Cut)
Swiss Cheese
Garlic Powder
Onion Powder
Pasta (optional, next time I won't add it, for the record.)

Directions:
Sauté chicken, add half of the alfredo powder to the chicken.
In soup pot, sauté potatoes, celery and onions.
Add chicken broth and boil until potatoes are cooked through.
Reduce heat and add remaining ingredients besides cheese.
(Add chicken, cream cheese, cream, remaining alfredo mix, ham, onion and garlic powder,  green beans.)
Just prior to serving, sprinkle diced swiss into soup.

Hashbrown Casserole



Ingredients:
Sliced Zucchini (optional, I've never used it before, but it was good.)
Butter
Frozen Hashbrowns
Dried Minced Onion
2 cans Cream of Chicken
Sour Cream
Shredded Cheese
Diced Ham
Parsley

Directions:
Slice Zucchini. Melt butter over it in microwave.
Mix together in bowl all other ingredients.
Put in casserole dish and top with more shredded cheese.
Bake at 350* until golden brown.

Slow-Cooker Pulled Pork

Traditional Pulled Pork dishes are a bit too "flavorful" for me. The BBQ sauce is a bit overwhelming. The cream of chicken keeps the flavor of it all, while mellowing it out just a bit!


Ingredients:
Pork Loin
BBQ Sauce
Brown Sugar
Cream of Chicken Soup
Hoisin Sauce

Directions:
Throw in crock and cook!
Shred with forks when cooked through.
I served on Sweet Onion Buns!

Comfort Food: French Onion Rice Bake



Ingredients:
Cream of Soup x 2 (I used 1 can cream of mushroom, 1 can cream of chicken this time)
2 Cups Milk
1/2 cup Heavy Cream
2 1/2 cups Minute Rice
Chicken
1 Packet Onion Soup Mix
Onion, diced


Directions:
Cube and cook (stove top) chicken and diced onion, adding a bit of the onion soup mixture.
In casserole dish, mix rice, milk, cream, seasoning and soups.
Add chicken when cooked through.
Bake for 30 minutes at 350*.

Italian Chicken and Veggies




Ingredients:
Thin-Sliced Chicken Breasts
Italian Dressing (I used Olive Garden brand this time)
Onion
Veggies (I usually do green beans, but this time couldn't decide between beans and broccoli, so I just went with both, haha.)
Butter

Directions:
Sauté chicken and onions in olive oil.  (If you are using fresh veggies, add them, too. I used pre-cooked frozen veggies this time.)
When about half cooked, add some  Italian dressing.
When chicken is cooked through, transfer to a separate pan with a dab of butter, to caramelize.
Add veggies to the dressing/onions, with a little more Italian dressing and a scoop of butter.
I served it with garlic bread and PLENTY of Parmesan cheese!

Veggie Frittata



Ingredients:
Potatoes, diced
(Any veggies you want, really...)
Onion
Yellow Pepper
Celery
Tomatoes
Eggs
Milk
Oregano
Basil
Parsley
Salt
Cheese (optional)

Directions:
Sauté potatoes, onions, celery, peppers in oil.
In a bowl, mix eggs/egg whites (I use 2/3 egg whites to 1/3 whole eggs), splash of milk, and spices.
Spread veggies evenly in pan (I add tomatoes right before eggs, because they don't need as long to cook.)
Pour egg mixture into pan and cover.
Cook through then pop under broiler to crisp the top.
We like to serve with cheese on top!

Slow-Cooker: Honey Garlic Chicken





Ingredients:
Chicken Breasts
Veggies (I used carrots, green beans and potatoes)
Hoisin Sauce
Garlic
Honey
Cream of Chicken Soup


Directions:
Mix can of cream of chicken with about half can of water and pour into slow cooker.
Add hoisin, garlic and honey.
Add chicken then veggies.
(I quarter the potatoes.)
Cook on low for 6 -8 hours.
Add another round of Hoisin, garlic and honey. Heat for a few more minutes.

Cheeseburger Soup




Ingredients:
Frozen Meatballs, thawed and quartered
Potatoes
Onion
Celery
Carrot Shreds
Beef Broth
Ranch Seasoning Packet
Cream of Mushroom Soup (Cream of anything would work, lol.)
Corn
Heavy Cream
Cheese



Directions:
Sauté in oil, the potatoes, onion, celery and carrots for 10 minutes.
Add beef broth and boil.
Once veggies are tender, add cream soup, ranch seasoning  and corn.
Add meatball pieces and cream, reducing heat to low.
Heat through.
Serve with shredded cheddar.

Tomato Pepper Pasta

Disclosure: I was cooking for 14 people when I made this, so I forgot to take the "after" pics, haha!
This was originally my Mom's recipe altered to fit my family better!
Ingredients:
Lean ground beef
Tomatoes
Onions
Bell peppers
Basil
1 can of diced tomatoes
Any small pasta (I used ditalini this time but often use small shells)
Directions:
Sauté chopped peppers and onions.
(Preheat over to 350* and boil pasta to al dente .)
Add ground beef to peppers and cook through.
Chop tomatoes.
Add cooked meat/peppers, tomatoes, can of diced tomatoes, basil and cooked pasta into casserole dish. Bake for 20-30 minutes.
I rarely add salt to anything I cook.... but this dish tastes great super salty. I heavily salt the pasta water, and heavily salt my serving!
